The Wellness Center invites St. Thomas students, faculty and staff to submit their favorite, easy-to-make healthy recipes to be compiled in an online cookbook (and in a limited-edition printed version). The book will focus on healthy recipes with simple ingredients that are easy for college students with limited time and budget.
Email recipes to the Wellness Center by Tuesday, Nov. 15: Include your name and indicate whether you are a student (with major and year), staff or faculty member. Participants also are invited to include a brief explanation of why that recipe was chosen or a favorite occasion for which it would be prepared.
Students who participate will be entered into a drawing; the winner will receive a $25 gift certificate to use at Whole Foods Market. There is a limit of four recipes.
The greatest challenges for students trying to eat healthy food include: limited time and funds, finding healthy portable snacks, grocery shopping, portion control, and healthy options on campus. Try to include recipes that address at least one of these challenges.
Once the recipes are compiled, the cookbook will be available online on the Wellness Center website, and limited copies will be printed and available for pick-up in the Wellness Center.
